Why Does Lettuce Turn Pink?
The exposure to air causes oxidation, which naturally helps protect the broken edge from decay.
During oxidation, some of the healthy polyphenols in the leaves transform from green to pink, Brekke adds.
This acts as a layer of protective armor of sorts.
