Rinse scallops; pat dry.
Cook Scallops
In a 12-inch skillet or a wok heat 1 Tbsp.
of the oil over medium-high.
Add half of the scallops.
Cook 3 to 4 minutes or until browned and opaque, turning once.
Repeat with remaining scallops.
Cook Pineapple and Peppers
Add remaining 1 Tbsp.
oil to skillet; heat over medium-high.
Cook and stir 2 to 3 minutes or until starting to soften and brown.
Add bell pepper; cook and stir 2 to 3 minutes more or until crisp-tender.
Combine and Serve
Return scallops to skillet.
Stir in sauce; heat through.
Serve over quinoa with lemon wedges.
