Serve over pasta, rice, or with a side of crusty bread.
Rinse shrimp; pat dry.
Preheat air fryer at 400F.
Combine Ingredients
Squeeze 3 Tbsp.
juice from one of the lemons; cut the remaining lemon into wedges.
In a large bowl combine lemon juice and the next five ingredients (through paprika).
Add shrimp, zucchini, and carrots; toss to coat.
Cook in the Air Fryer
Using a slotted spoon, transfer shrimp mixture to air-fryer basket.
Cook 9 to 11 minutes or until shrimp are opaque, stirring occasionally.
Serve with lemon wedges.
