1tsp.bottled hot pepper sauce

112cupsmozzarella cheese(6oz.)

114cupscrumbled blue cheese(5oz.)

12cupshredded Parmesan cheese(2oz.)

13cupall-purpose flour

Directions

Prepare Soup Base

In 4-quart Dutch oven melt butter over medium heat.

Add celery and onion; cook and stir until onion is tender.

Stir in broth, milk, and the 1 teaspoon hot pepper sauce.

Add gradually to soup, stirring after each addition just until melted.

Stir in three-fourths of the shredded chicken; heat through.

Top with remaining chicken, blue cheese, and, if you like, additional hot sauce.

Thaw overnight in the refrigerator if frozen.

Reheat on the stovetop over medium-low heat, stirring occasionally.

Add an additional splash of broth or milk if needed to adjust the consistency.
